A2 vs A1 ghee: what is the difference?

You will see ghee labelled A2 everywhere, usually at a higher price. The difference between A2 and A1 comes down to one protein, and the type of cow that gives the milk.

A1 and A2 beta-casein

Cow milk contains a protein called beta-casein, which comes in two main types: A1 and A2. Indigenous Indian breeds like the Gir cow produce mostly A2. Many crossbred and foreign-origin cows produce A1.

Why the difference matters

When A1 milk is digested, it releases a compound called BCM-7, which some people find harder on the stomach. A2 milk does not release it in the same way, which is why many people find A2 milk and ghee gentler and easier to digest.

Which ghee should you choose?

For everyday use, children, and anyone with a sensitive gut, A2 ghee from an indigenous breed is the usual choice. It is lighter and, from Gir cows made by the bilona method, carries the aroma and grain of real desi ghee.

Is A2 ghee worth the extra cost?

A2 milk comes from indigenous cows that give less milk, so it is naturally more expensive to produce. If digestibility and quality matter to you, most people find it worth it.
