In a Rajasthani kitchen, no thali feels complete without a fiery red garlic chutney on the side. This is lal mirch chatni, also called lahsun ki chatni, and it is the sharp, smoky counterpoint to dal bati, bajra roti, and hot parathas.
What is Rajasthani lal mirch chatni?
It is a coarse red chutney made from dried red chillies and plenty of fresh garlic, ground on a stone and finished in ghee. Unlike a thin table sauce, it is thick, oil-set, and meant to be eaten in small, punchy amounts. Every household has its own version, but the backbone is always the same: red chilli, garlic, salt, and ghee.
How it is made, the traditional way
- Dried red chillies are cleaned by hand and soaked until soft.
- They are stone-ground on the sil-batta with fresh garlic and salt, so the texture stays coarse.
- The paste is roasted in desi ghee until the raw smell goes and the colour deepens.
- It is cooled and packed by hand.
Grinding on the sil-batta, rather than in a mixer, keeps the texture alive. Roasting in desi ghee is what gives the chutney its keeping quality and its deep, rounded heat.
How to eat lahsun ki chatni
- The classic pairing is with dal bati churma, spooned over a cracked bati.
- With bajra or makki roti through the winter.
- Smeared thin inside a paratha or on toast.
- As a side with khichdi, or plain rice and a spoon of ghee.
Why authenticity matters
Most jars sold as garlic chutney are made with cheap refined oil, added colour, and preservatives. A real Rajasthani lahsun ki chatni needs only chillies, garlic, salt, and ghee. The red should come from the chilli, not from a bottle of colour.
